  • 1 cup Kodiak Cakes Buttermilk Pancake Mix
  • 2 ripe bananas, mashed The riper the bananas, the sweeter the muffins.
  • 2 large eggs
  • 1/4 cup honey or maple syrup Adjust sweeteners based on preference.
  • 1/4 cup milk (dairy or non-dairy)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup dark chocolate chips or nuts (optional) Feel free to add in your favorites.

Preparation

  • Preheat your oven to 350°F (175°C) and line your muffin tin with liners or lightly grease it.
  • In a large mixing bowl, mash the ripe bananas until smooth with minimal lumps.
  • Add in the eggs, honey (or maple syrup), milk, and vanilla extract. Whisk until fully combined.
  • In a separate bowl, mix the Kodiak cake mix, baking soda, baking powder, and optional cinnamon.
  • Gradually fold the dry ingredients into the wet mixture. Stir until just combined—do not over-mix! If using, fold in the chocolate chips or nuts.
  • Using a spoon or a muffin scoop, fill each muffin cup about 3/4 of the way full with the batter.

Baking

  • Place in the preheated oven and bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove from the oven and let them cool in the pan for 5 minutes before transferring to a wire rack.

Notes

For best results, use very ripe bananas. You can customize the muffins with various add-ins like nuts or chocolate chips. Store in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
