  • 2 slices bread (your choice: sourdough or whole grain)
  • 1 cup shredded cheese (such as cheddar, mozzarella, or a blend) Opt for cheeses that melt well.
  • ½ cup kimchi, chopped Give it a quick squeeze with a paper towel if it releases too much liquid.
  • 1 tablespoon butter Divide for cooking on both sides.
  • to taste sesame seeds or chopped green onions (optional for garnish) Add for extra flair.

Instructions
 

Preparation

  • Spread the kimchi on a cutting board and chop it into smaller pieces.
  • Take one slice of bread and layer half of the cheese on top.
  • Spread the chopped kimchi evenly over the cheese.
  • Add the remaining cheese on top and cover with the second slice of bread.

Cooking

  • In a non-stick skillet, melt half the butter over medium heat.
  • Place the sandwich in the skillet and press down gently, cooking for about 2-4 minutes until golden brown.
  • Carefully flip the sandwich and add the remaining butter to the pan, cooking for another 2-4 minutes until both sides are crispy and the cheese is melted.

Serving

  • Remove from heat, cut in half, and serve warm.
  • Optionally, garnish with sesame seeds or green onions.

Notes

Serve with a warm bowl of tomato soup, side salad, or pickled vegetables. Pair with iced tea or lemonade for a complete meal.
