  • 1 lb kielbasa sausage, sliced
  • 4 medium potatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream for creaminess
  • 1 cup shredded cheese (optional) for added flavor
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil for sautéing
  • Fresh parsley for garnish

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the sliced kielbasa and cook until browned, about 3-4 minutes. Remove and set aside.
  • In the same pot, add chopped onions and garlic, cooking until the onions are translucent.
  • Stir in the diced potatoes and pour in the chicken broth. Bring to a boil and then reduce the heat to simmer for about 15 minutes, or until the potatoes are fork-tender.

Cooking

  • Stir in the heavy cream and add the sautéed kielbasa back to the pot. Mix in thyme and black pepper.
  • Let the soup simmer for another 5 minutes. If using cheese, stir it in until melted and blended through.
  • Ladle the soup into bowls and garnish with fresh parsley. Enjoy your delicious meal!

Notes

For a lighter version, substitute half-and-half or milk for the heavy cream. Adjust spice levels and consider using different fresh herbs like dill or chives.
