Citrus Glaze Ingredients

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  • In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream the softened butter with granulated sugar until it’s light and fluffy—about 4-5 minutes.
  • Add the eggs one at a time, ensuring each one is well incorporated before adding the next.
  • Stir in the key lime zest, key lime juice, and vanilla extract until blended.
  • Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix!

Baking

  • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  • Bake for about 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Citrus Glazing

  • For the glaze, mix the powdered sugar with key lime juice in a bowl until smooth.
  • Drizzle over completely cooled cake before serving.

Notes
