Ingredients
  

For the crust

  • 1 cup graham cracker crumbs Can substitute with digestive biscuits or cookies.
  • 1/4 cup sugar For sweetness.
  • 1/2 cup unsalted butter, melted Must be melted for proper crust texture.

For the filling

  • 1 can sweetened condensed milk (14 oz) Essential for the creamy texture.
  • 1/2 cup fresh key lime juice Freshly squeezed is recommended.
  • 1 tablespoon lime zest Adds flavor and aroma.

For topping

  • 1/2 cup whipped cream For topping each bite.
  • Lime slices For garnish.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter until well combined.
  • Grease a mini muffin tin and press about a tablespoon of the graham cracker mixture into each muffin cup, making a solid crust.
  • Bake the muffin tin for about 5-7 minutes, or until golden brown, then allow to cool slightly.
  • In another mixing bowl, whisk together sweetened condensed milk, key lime juice, and lime zest until smooth.
  • Pour the key lime filling into each cooled crust, filling them about 3/4 of the way full.
  • Cover the muffin tin and refrigerate for at least 2 hours to set.

Serving

  • Top each bite with a dollop of whipped cream and garnish with a slice of fresh lime before serving.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze for up to a month. Thaw in the fridge overnight before serving.
