Ingredients
  

For the crust

  • 1.5 cups graham cracker crumbs Make sure to use finely crushed graham crackers.
  • 0.5 cups unsalted butter, melted
  • 0.25 cups granulated sugar

For the filling

  • 1 can sweetened condensed milk 14 ounces.
  • 0.5 cups fresh key lime juice Regular lime juice can be used if key limes are unavailable.
  • 2 large eggs

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, mix together graham cracker crumbs, melted butter, and granulated sugar until well combined.
  • Press the mixture firmly into the bottom of a 9x9-inch baking pan to form an even layer.
  • Bake for about 8-10 minutes until slightly golden. Remove from the oven and allow to cool.

Making the Filling

  • In a large bowl, whisk together sweetened condensed milk, key lime juice, eggs, and lime zest until smooth and creamy.

Combining and Baking

  • Pour the filling over the cooled graham cracker crust, smoothing it out with a spatula.
  • Return to the oven and bake for an additional 15-20 minutes until set in the middle.

Cooling and Chilling

  • Remove from the oven and let it cool at room temperature.
  • Refrigerate for at least 2 hours to allow the flavors to meld and the bars to firm up.

Serving

  • Once chilled, slice into squares and serve with a dusting of powdered sugar or some whipped cream on top, if desired. Enjoy!

Notes

For the best flavor, use fresh key limes. Chill overnight for a firmer texture. Be cautious not to overbake; the filling should be slightly jiggly in the middle when pulled out of the oven.
