Ingredients

For the Soup

  • 2 tablespoons olive oil For sautéing
  • 1 medium onion, diced Adds flavor base
  • 2 cloves garlic, minced For aromatic flavor
  • 1 teaspoon Italian seasoning Gives a Tuscan flavor
  • 4 cups chicken broth Base of the soup
  • 2 cups cooked chicken, shredded For protein
  • 1 can (14.5 oz) diced tomatoes Adds sweetness and acidity
  • 2 cups fresh spinach For freshness and color
  • ½ cup heavy cream For creaminess
  • Salt and pepper to taste Season to preference
  • Parmesan cheese for topping (optional) For garnishing

Instructions

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the diced onion and minced garlic, sautéing until fragrant and translucent—about 3-4 minutes.
  • Sprinkle in the Italian seasoning, stirring for about a minute to blend the flavors.
  • Pour in the chicken broth, followed by the shredded chicken and diced tomatoes. Bring to a gentle simmer.
  • Add the fresh spinach and let it wilt in the broth for 2-3 minutes.
  • Reduce heat and slowly stir in the heavy cream, warming through, then season with salt and pepper to taste.
  • Ladle the soup into bowls, topping with freshly grated parmesan cheese if desired.
  • Enjoy your warm bowl of deliciousness!

Notes

Experiment with different vegetables like zucchini or bell peppers, and consider using coconut milk for a dairy-free alternative. Avoid overcooking the spinach by adding it last, and a squeeze of lemon juice at the end can enhance the flavors.
