  • 1 teaspoon vanilla extract
  • 0.5 teaspoon baking powder

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream the softened butter and erythritol together until the mixture is light and fluffy.
  • Add in the egg and vanilla extract, and mix until well combined.
  • In another bowl, whisk together almond flour, baking powder, and salt.
  • Gradually add the dry mixture into the wet ingredients, stirring until combined.
  • Pour the dough into a greased 9x9 inch baking dish and spread it out evenly.
  • Bake in the preheated oven for about 20-25 minutes, or until the edges are golden brown.
  • Let the bars cool completely before slicing them into squares.

Notes

You can top these bars with sugar-free chocolate chips or a drizzle of sugar-free icing for extra flavor. Store in an airtight container at room temperature for up to a week or refrigerate for up to two weeks.
