Ingredients
  

For the Crust

  • 1 ½ cups almond flour Almond flour gives the crust a low-carb base.
  • ½ cup unsalted butter, melted Use unsalted butter for better control over the saltiness.
  • ¼ cup erythritol or your preferred keto sweetener Choose a sweetener based on your taste preference.
  • ¼ teaspoon salt Enhances the flavor of the crust.

For the Filling

  • 4 large eggs Provides structure and richness.
  • 1 cup fresh Key lime juice (or regular lime juice) Freshly squeezed juice is recommended for best flavor.
  • 1 can coconut cream (14 oz) Adds creaminess and a subtle coconut flavor.
  • 1 teaspoon vanilla extract Enhances the overall flavor.
  • Zest of 2 limes lime zest Adds extra lime flavor.
  • to taste optional additional sweetener Adjust sweetness according to preference.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine almond flour, melted butter, erythritol, and salt. Mix well until crumbly, and press the mixture evenly into the bottom of a pie pan to form your crust.
  • Bake the crust in the preheated oven for about 10 minutes, or until it’s lightly golden. Remove from the oven and allow it to cool.

Filling Preparation

  • In a separate bowl, whisk together the eggs, Key lime juice, coconut cream, vanilla extract, lime zest, and additional sweetener if desired until smooth.

Assemble and Bake

  • Pour the filling into the cooled crust and return it to the oven. Bake for another 15-20 minutes, or until the filling is set but still jiggles slightly in the center.
  • Once done, remove the pie from the oven and let it cool to room temperature. Then, chill it in the refrigerator for at least 3 hours to firm up before serving.

Serve

  • Finish with a sprinkle of lime zest or whipped coconut cream on top before slicing and serving.

Notes

Use freshly squeezed lime juice for the best flavor. Make sure to chill the pie properly to set it nicely and consider tasting the filling before baking to achieve the desired sweetness. Avoid overbaking to keep the filling tender.
