  • 1/2 cup sweetener (erythritol or your preferred low-carb sweetener) Adjust the sweetener to taste.
  • 1 large egg Acts as a binding agent.
  • 1 tsp vanilla extract For added flavor.
  • 1/2 tsp baking soda Helps the cookies rise.
  • 1 pinch salt Enhances flavor.

Preparation

  • Preheat your oven to 350°F (175°C) to ensure it’s warm by the time your cookie mixture is ready.
  • In a mixing bowl, combine the almond butter, egg, sweetener, and vanilla extract. Stir until smooth and well-integrated.
  • In a separate bowl, mix together the cocoa powder, baking soda, and a pinch of salt.
  • Gradually add the dry mixture to the wet ingredients, stirring until fully incorporated.
  • Using a cookie scoop, drop spoonfuls of the batter onto a lined baking sheet, spacing them out to allow for spreading.
  • Bake for 10-12 minutes until the edges are firm.
  • Allow your cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Experiment with different nut butters for flavor variation. Adjust the sweetener based on your taste preference. Don’t overbake; the cookies will continue cooking after being removed from the oven.
