  • 1 cup cream cheese (softened) Ensure it's softened to room temperature.
  • 1 cup heavy whipping cream Whipped to stiff peaks.
  • ½ cup powdered erythritol (or other keto-friendly sweeteners) Adjust according to taste.
  • 1 teaspoon vanilla extract

Topping

  • 1 cup crushed keto-friendly cookies For topping; these can be store-bought or homemade.
  • to taste cocoa powder or nuts Optional, for extra flavor.

Preparation

  • Gather all your ingredients, ensuring the cream cheese is softened for easier mixing.
  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Gradually add the powdered erythritol and vanilla extract, mixing until well combined.
  • In another bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream.
  • In your serving dish, spoon in half of the cream mixture to create the first layer.
  • Sprinkle half of the crushed keto cookies over the cream layer.
  • Repeat by spooning another layer of the cream mixture on top, followed by the remaining crushed cookies.
  • Cover the dish and refrigerate for at least one hour before serving.
  • Serve with a sprinkle of cocoa or nuts for an extra crunch.

Notes

Best enjoyed fresh, but can be stored in the refrigerator for up to three days. Cover tightly to avoid absorption of odors. Does not freeze well due to its creamy texture.
