  • 2 each eggs For binding the roll-ups.

Preparation

  • Preheat your oven to 400°F (200°C). This ensures the perfect crunch for your roll-ups.
  • Gently rinse your lettuce leaves and pat them dry to prevent sogginess.

Assembly

  • Lay down one lettuce leaf on a flat surface, and layer it with slices of corned beef, a sprinkle of Swiss cheese, a dollop of sauerkraut, and a drizzle of Thousand Island dressing.
  • Tightly roll the lettuce leaf around the fillings from one end to the other, securing the ingredients inside. Use a toothpick if necessary.

Cooking

  • In a bowl, whisk together two eggs and add in your spices.
  • Dip each roll-up into the egg wash, covering the entire outside.
  • Place the roll-ups seam-side down on a baking sheet lined with parchment paper, and bake for about 15-20 minutes or until golden brown.
