Ingredients

  • 2 cups cooked shredded chicken
  • 1 can diced tomatoes (14.5 oz)
  • 1 can green chilies (4 oz)
  • 1 cup chicken broth
  • 8 oz cream cheese, cubed

Spices

  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt
  • to taste Pepper

  • fresh cilantro

Instructions
 

Preparing the Base

  • In a large pot, combine the chicken broth, diced tomatoes, and green chilies. Stir to combine.

Adding Chicken

  • Gradually fold in the shredded chicken, making sure everything is well mixed.

Spicing It Up

  • Sprinkle in the cumin, paprika, garlic powder, onion powder, salt, and pepper. Stir to combine all the spices evenly.

Creamy Goodness

  • Add the cubed cream cheese to the pot. Reduce the heat to low and allow the cream cheese to melt and mix into the chili for at least 5-10 minutes.

Simmering

  • Stir everything well until you have a smooth and creamy consistency. Allow it to simmer for an additional 5 minutes.

Serving

  • Ladle the chili into bowls and personalize with your favorite toppings, if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. Reheat on the stovetop over low heat.
