  • 1 cup cottage cheese Use fresh for best texture
  • 3 large eggs
  • ½ cup almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon vanilla extract
  • pinch salt

Preparation

  • In a mixing bowl, combine the cottage cheese, eggs, almond flour, baking powder, vanilla extract, and salt. Use a blender or whisk to mix until smooth and well combined.

Cooking

  • Place a nonstick skillet or griddle over medium heat and add a small amount of butter or oil to coat the surface.
  • Pour about ¼ cup of the pancake batter onto the skillet for each pancake. Let them cook until bubbles form on the surface, approximately 2-3 minutes.
  • Carefully flip the pancakes and cook for an additional 2-3 minutes, or until golden brown and cooked through.
  • Remove the pancakes from the skillet and serve warm with your choice of toppings.

Notes

Tips: Use fresh ingredients, adjust the consistency with milk or water if batter is too thick, don’t overmix, and keep pancakes warm in a low oven if making a large batch. Store leftovers in an airtight container in the refrigerator for up to three days.
