  • 2 cups finely grated carrots Ensure carrots are fresh for best flavor.
  • ½ cup coconut flour
  • 1 cup cream cheese, softened
  • 1 tsp vanilla extract
  • ½ cup sugar-free sweetener (adjust to taste) Feel free to taste and adjust sweetness.
  • 1 tsp ground cinnamon
  • ½ tsp nutmeg
  • 1 pinch salt

Preparation

  • Wash and peel the carrots, then finely grate them and set aside in a large mixing bowl.
  • In another bowl, whisk together the cream cheese, vanilla extract, and sugar-free sweetener until smooth and creamy.
  • Gradually add the grated carrots into the cream cheese mixture and mix well.
  • Sprinkle in the coconut flour, cinnamon, nutmeg, and salt; stir until thoroughly combined.
  • Cover the bowl with plastic wrap and chill in the fridge for at least 30 minutes.
  • Once chilled, take a small amount of the mixture and roll it into a log or spiral shape, about 1 inch in diameter. Repeat until all the mixture is used.
  • Optionally, roll the roll-ups in chopped nuts or drizzle with sugar-free frosting.
  • Serve immediately or refrigerate until ready to serve.

Notes

These roll-ups can be stored in an airtight container in the fridge for up to five days. Optional toppings can be added right before serving.
