  • 1 cup unsalted butter, softened Ensure the butter is softened but not melted.
  • 1 cup almond flour Can be substituted with coconut flour, adjust ratio accordingly.
  • 1/2 cup erythritol (or another preferred low-carb sweetener) Choose a low-carb sweetener based on preference.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • pinch salt

Preparation

  • Preheat your oven to 350°F (180°C).
  • In a mixing bowl, beat the softened butter and erythritol together until light and fluffy, about 3-4 minutes.
  • Add in the egg and vanilla extract, mixing well until fully combined.
  • In another bowl, combine almond flour, baking powder, and salt. Mix well.
  • Gradually add the dry mixture to the wet mixture, stirring until it forms a dough.
  • Form small balls from the dough and place them onto a lined baking sheet. Flatten each ball slightly.
  • Bake for 12-15 minutes or until the edges are lightly golden.
  • Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to a week or in the fridge for up to two weeks. Microwave briefly to warm before serving.
