Ingredients
  

  • 1 box angel food cake mix
  • 1 can 20 oz crushed pineapple in juice (do not drain)
  • 1 container 8 oz whipped topping (Cool Whip), thawed
  • 1 box 3.4 oz instant vanilla pudding mix
  • 1 can 8 oz crushed pineapple (for topping)
  • Maraschino cherries optional garnish
  • Shredded coconut optional garnish

Instructions
 

  • Preheat the oven according to the angel food cake mix package directions.
  • In a large bowl, combine the angel food cake mix and the can of crushed pineapple (with juice) and mix until well blended.
  • Pour the batter into a greased 9x13 inch baking dish and bake as directed on the cake mix box.
  • Once baked, let the cake cool completely.
  • In another bowl, mix the whipped topping and the instant vanilla pudding mix until smooth and well combined.
  • Spread the pudding mixture over the cooled cake.
  • Top with the second can of crushed pineapple.
  • Garnish with maraschino cherries and shredded coconut if desired.
  • Chill in the refrigerator for a few hours before serving.
