Ingredients

  • For the Cake:
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 2 large eggs beaten
  • 1 teaspoon vanilla extract
  • 1 20-ounce can crushed pineapple with juice
  • For the Pineapple Glaze:
  • 1 cup powdered sugar
  • ¼ cup pineapple juice reserved from the crushed pineapple can
  • 1 tablespoon melted butter
  • ½ teaspoon vanilla extract

Instructions

  • Preheat Oven:
  • Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking pan.
  • Mix Dry Ingredients:
  • In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt.
  • Combine Wet Ingredients:
  • In a separate bowl, mix the eggs, vanilla extract, and crushed pineapple (including the juice).
  • Create the Batter:
  • Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined. Be careful not to overmix.
  • Bake the Cake:
  • Pour the batter into the prepared pan and spread evenly. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and let the cake cool on a cooling rack.
  • Prepare the Pineapple Glaze:
  • In a small saucepan, combine powdered sugar, pineapple juice, melted butter, and vanilla extract. Heat over low heat, stirring until smooth and well combined.
  • Glaze the Cake:
  • Once the cake has cooled slightly, poke holes all over the surface with a fork or skewer. Pour the warm pineapple glaze evenly over the cake, letting it soak into the holes.
  • Cool and Serve:
  • Allow the cake to cool completely before slicing and serving.
