Ingredients
  

For the Chicken

  • 1 pound chicken thighs, boneless and skinless You can also use boneless chicken breasts.
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper

For the Gyros

  • 4 pieces pita bread Warm before serving.
  • 1 cup chopped lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced cucumber
  • 1/2 cup tzatziki sauce Store-bought or homemade.

Instructions
 

Marinate the Chicken

  • In a mixing bowl, combine olive oil, oregano, garlic powder, onion powder, salt, and pepper. Add the chicken thighs and coat them well with the marinade. Allow them to marinate for at least 15 minutes, or up to overnight in the refrigerator for maximum flavor.

Cook the Chicken

  • Heat a grill pan or skillet over medium-high heat. Add the marinated chicken thighs and cook for about 6-7 minutes per side until they are fully cooked (internal temperature should reach 165°F). Remove from the heat and let them rest for a few minutes before slicing.

Warm the Pita Bread

  • In the same pan or a separate skillet, warm the pita bread for about 1-2 minutes on each side until soft and pliable.

Assemble the Gyros

  • Begin by placing some of the sliced chicken in the center of each pita. Top with chopped lettuce, diced tomatoes, diced cucumbers, and a generous drizzling of tzatziki sauce.

Wrap and Enjoy

  • Fold the pita over the filling, secure it with parchment paper if needed, and dig into your delicious Juicy Greek Chicken Gyros!

Notes

For best flavor, marinate the chicken for at least an hour or overnight. If using leftover gyros, store the chicken separately from the toppings.
