  • 4 medium medium-sized potatoes, peeled and chopped About 2 pounds
  • 1 small small onion, finely chopped
  • 1 cup ground meat (like chicken or beef) or cooked vegetables (like corn or peas) For a vegetarian option
  • 1 large egg, beaten
  • 1 cup all-purpose flour
  • 1-2 cups panko breadcrumbs

Preparation

  • In a large pot, bring salted water to a rolling boil. Add the chopped potatoes and cook until they are fork-tender, about 15 minutes. Drain and allow to cool slightly.
  • In a skillet over medium heat, sauté the chopped onion until translucent. If you’re using meat, add it now and cook until browned. If you’re opting for a veggie filling, add your vegetables and cook until soft. Season with salt and pepper.
  • In a large bowl, mash the boiled potatoes until smooth. Combine the sautéed onion and meat or veggies with the mashed potatoes. Mix well and adjust seasoning if necessary.
  • Take a handful of the potato mixture and form it into small patties or oval shapes. Repeat until all of the mixture is used.
  • Set up a breading station with three bowls: one with flour, one with the beaten egg, and one with panko breadcrumbs. Dip each croquette in flour, followed by the egg, and then coat thoroughly with breadcrumbs.
  • In a deep skillet or saucepan, heat the oil over medium-high heat. Carefully place a few croquettes in the hot oil, frying in batches if necessary. Fry until golden brown on all sides, about 3-4 minutes per side. Drain on paper towels.

Notes
