Ingredients
  

For the Filling

  • 1 cup cooked chicken, shredded
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fresh jalapeños, diced Adjust to taste
  • 1/4 teaspoon garlic powder

For Assembly

  • 2 large flour tortillas
  • 1 tablespoon olive oil, for frying

Instructions
 

Preparation

  • In a mixing bowl, combine the softened cream cheese, shredded cheddar, diced jalapeños, garlic powder, and shredded chicken. Stir well until all the ingredients are evenly combined and creamy.
  • In a heated skillet over medium heat, add a splash of olive oil. Then, place one of the flour tortillas into the skillet, allowing it to warm slightly.

Cooking

  • Spread half of the chicken mixture evenly over one half of the tortilla. Fold the tortilla over to cover the filling.
  • Cook the quesadilla for about 3–4 minutes on each side, or until it turns golden brown and crispy. Repeat this process with the second tortilla and the remaining filling.

Serving

  • Remove the quesadilla from the skillet, let it cool for a minute, and then slice it into wedges. Serve warm with your favorite dipping sauces, like guacamole or sour cream.

Notes

Cook chicken in advance to save time. Adjust spice levels based on preference. Allow the quesadilla to sit covered for a minute after cooking for gooey cheese.
