  • 1 pound Italian sausage (mild or spicy)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups fresh spinach
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 package (9-12 ounces) refrigerated tortellini
  • 1 cup heavy cream
  • to taste salt and pepper
  • for garnish fresh basil
  • for serving grated Parmesan cheese

Cooking the Soup

  • In a large soup pot or Dutch oven, over medium heat, cook the Italian sausage until it’s browned and crumbled, about 6-8 minutes. Drain off any excess fat.
  • Add the diced onion and minced garlic to the pot, cooking for an additional 2-3 minutes until the onion is translucent.
  • Pour in the chicken broth and add the diced tomatoes (with their juices). Bring to a boil.
  • Stir in the tortellini and cook according to the package instructions, typically around 3-5 minutes.
  • Once the tortellini is cooked, add the fresh spinach and heavy cream, stirring until the spinach is wilted and the soup is heated through.
  • Taste and add salt and pepper as needed.
  • Ladle into bowls, garnish with fresh basil and a sprinkle of Parmesan cheese, and enjoy!

Notes

For thicker soup, consider adding more cream or a cornstarch slurry. You can also include various vegetables like carrots or zucchini for added nutrition. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
