  • 2 cans cans of white beans (such as cannellini or navy beans), drained and rinsed
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar or lemon juice You can use either for a zesty flavor.
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon dried oregano Can be replaced with fresh basil or thyme.
  • Salt and pepper, to taste

Preparation

  • Start by rinsing and draining the canned white beans to remove excess sodium and improve flavor.
  • In a small bowl, whisk together olive oil, red wine vinegar (or lemon juice), minced garlic, dried oregano, salt, and pepper until well combined.
  • In a large mixing bowl, combine the drained beans and chopped parsley. Pour the dressing over the beans and gently toss until all are well coated.
  • Allow the mixture to marinate for at least 30 minutes at room temperature for optimal flavor. For better flavor, let it sit longer in the refrigerator.

Serving

  • Enjoy your marinated beans as a side, on a salad, or atop toasted bread for a delicious crostini.

Notes

Allow the beans to marinate overnight for a more intense flavor. If you prefer a creamier texture, mash some beans while keeping others whole for added richness. Leftovers can be stored in an airtight container in the fridge for up to 4 days.
