For the cornbread poppers

  • 1 cup cornmeal
  • 1 cup all-purpose flour You can substitute with whole wheat flour for a healthier option.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs

For the honey butter

  • 1/4 cup honey

Preparation

  • Preheat your oven to 400°F (200°C). Grease a mini muffin tin or line it with muffin liners for easy removal.
  • In a large bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar until evenly combined.
  • In a separate bowl, mix the milk, vegetable oil, honey, and eggs until well blended.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay!
  • Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
  • Place the tin in the preheated oven and bake for 12-15 minutes, or until the tops are golden and a toothpick inserted comes out clean.

Honey Butter Preparation

  • While the poppers are baking, melt the butter in a small bowl and mix it with honey until smooth.

Serving

  • Let the poppers cool slightly before removing them from the tin. Serve warm drizzled generously with honey butter.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for 5-7 minutes or microwave briefly.
