  • 2-3 lbs beef chuck roast Good quality beef is key.
  • 1 medium onion, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • to taste salt and pepper
  • 4-6 crusty rolls (like hoagie or baguette) Toasted for serving.

Optional Toppings

  • Sliced mozzarella or provolone cheese For a cheesy finish.
  • Sliced jalapeños For a spicy kick.
  • Caramelized onions For extra flavor.

Preparation

  • Season the beef chuck roast generously with salt and pepper.
  • Sear the beef in a hot skillet for 3-4 minutes per side until brown (optional).
  • Place the sliced onion and minced garlic at the bottom of the slow cooker.
  • Layer the seared beef on top.
  • Pour in the beef broth, Worcestershire sauce, and sprinkle the dried thyme on top.

Cooking

  • Cover and cook on low for 8 hours, or high for 4 hours, until the beef is tender and easily shredded.
  • Once cooked, remove the beef and shred it using two forks. Return the shredded beef to the slow cooker and stir it into the broth.

Assembly

  • Serve the beef on toasted rolls, ladling some of the broth over the meat.
  • Top with cheese, if desired, and serve with a small bowl of broth for dipping.

Notes

For quality, choose a good cut of beef. Add spices for a kick, and don’t skip fresh herbs for aromatic broth. Store leftovers separately for freshness.
