Ingredients
  

For the Cake

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 1 cup honey Use high-quality honey for best flavor.
  • 1 teaspoon baking soda
  • 3 large eggs
  • 1 teaspoon vanilla extract

For the Cream Filling

  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line several round baking pans with parchment paper.
  • In a bowl, combine honey, sugar, and butter. Microwave for about 1 minute, mixing well until the butter melts.
  • In a separate bowl, whisk the eggs until frothy. Then, mix them into the honey mixture.
  • In another bowl, combine the flour and baking soda. Gradually fold this mixture into the wet ingredients until just blended; don’t overmix!

Baking

  • Divide the batter evenly among the prepared pans. Bake for 10-12 minutes, or until a toothpick inserted in the center comes out clean. Let them cool completely.

Cream Filling

  • In a large mixing bowl, whip the heavy cream and powdered sugar until soft peaks form.

Assembly

  • Once the cakes have cooled, place one layer on a serving platter and spread a layer of whipped cream over it. Continue layering the cake and cream until all layers are assembled.

Chilling

  • Cover the cake and refrigerate for at least 4 hours (or overnight) to allow it to set properly before serving.

Notes

Serve with fresh berries or vanilla ice cream. Don't skip the chilling time for best flavor integration.
