For the Pumpkin Bars

  • 1 cup canned pumpkin puree not pumpkin pie filling
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

For the Cream Cheese Frosting

  • 8 ounces cream cheese softened
  • 4 cups powdered sugar
  • 1/4 cup unsalted butter softened

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  • In a large mixing bowl, combine the canned pumpkin, sugar, vegetable oil, eggs, and vanilla extract. Beat until well combined and creamy.
  • In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Gradually add the dry mixture to the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are perfectly fine!
  • Pour the batter into the prepared baking pan, spreading it evenly. Bake for about 25 minutes, or until a toothpick inserted in the center comes out clean.
  • While the bars are baking, beat together the softened cream cheese, butter, and powdered sugar until smooth and creamy.
  • Once the bars are out of the oven, allow them to cool completely. Once cooled, spread the cream cheese frosting generously over the top.
  • Cut into squares and serve!

Notes

Pumpkin puree is key for texture. Adjust spices to your liking.
