  • 2 pieces ripe bananas, mashed The riper the bananas, the sweeter the cookies will be.
  • 1/2 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Optional Ingredients

  • 1/2 cup chocolate chips or nuts For added texture.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar. Add in the mashed bananas, egg, and vanilla extract. Mix until well combined.
  • In another bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Slowly incorporate the dry ingredients into the wet mixture until just combined.
  • If using, fold in the chocolate chips or nuts into the dough.

Baking

  • Using a cookie scoop or spoon, drop generous portions of dough onto your prepared baking sheet, leaving enough space between each cookie for spreading.
  • Place in the preheated oven and bake for 12-15 minutes, or until the edges are golden brown.

Cooling

  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to five days. Cookies can also be frozen in a freezer-safe bag for up to three months. Thaw at room temperature or warm in the microwave when ready to enjoy.
