  • 3 cups finely chopped apples preferably Granny Smith
  • 1 cup granulated sugar
  • ¾ cup packed brown sugar
  • 1 cup all-purpose flour
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • ½ cup chopped pecans or walnuts
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine chopped apples, granulated sugar, brown sugar, and melted butter. Stir until well incorporated.
  • Add eggs and vanilla extract, and mix thoroughly.
  • In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet mixture, folding gently to combine. Be careful not to overmix!
  • Stir in the chopped pecans or walnuts for extra crunch.
  • Pour the batter into a greased 9-inch round cake pan.

Baking

  • Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool for about 15 minutes before removing it from the pan.

Notes

For best results, use fresh ingredients and avoid overmixing. Store in an airtight container in the refrigerator for up to 3 days; can be frozen for up to 2 months.
