Ingredients
  

For the Dough

  • 2 cups all-purpose flour Use for pastry dough.
  • 1/2 cup unsalted butter, cold and cubed Ensure butter is very cold for flaky texture.
  • 1/4 cup cold water Add gradually to form dough.

For the Filling

  • 1 cup potatoes, diced Boil until slightly tender.
  • 1 cup carrots, diced Boil until slightly tender.
  • 1 cup onions, chopped Sauté until translucent.
  • 1/2 cup peas (fresh or frozen) Add to the mixture.
  • 1 tsp thyme Seasoning for flavor.
  • to taste Salt Adjust according to preference.
  • to taste Pepper Adjust according to preference.
  • 1 egg beaten (for egg wash) Use for brushing before baking.

Instructions
 

Prepare the Dough

  • In a large bowl, combine the flour and cold butter. Using your fingers or a pastry cutter, mix until the texture resembles coarse crumbs.
  • Gradually add cold water, mixing until the dough forms. Wrap in plastic wrap and refrigerate for at least 15 minutes.

Make the Filling

  • In a pot, boil diced potatoes and carrots in salted water until slightly tender (about 5-7 minutes). Drain and set aside.
  • In a pan, sauté onions until translucent, then add the potatoes, carrots, and peas. Season with thyme, salt, and pepper. Mix well and allow to cool slightly.

Roll Out the Dough

  • On a floured surface, roll out the dough to about 1/8 inch thick.
  • Using a round cutter or plate, cut out circles (about 6 inches in diameter).

Fill and Seal the Pasties

  • Place a generous spoonful of the filling in the center of each dough circle.
  • Fold over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative touch.

Bake

  • Preheat your oven to 375°F (190°C).
  • Place the pasties on a baking sheet lined with parchment paper. Brush with beaten egg for a golden finish.
  • Bake for 30-40 minutes or until golden brown and crispy.

Notes

For best results, ensure the dough is cold and sealed tightly to prevent leaking during baking. Store leftovers in an airtight container.
