Ingredients
  

Main Ingredients

  • 6 large large eggs
  • 1/2 cup shredded cheese Your choice of cheese.
  • 1/2 cup milk Dairy or non-dairy.
  • to taste Salt
  • to taste Pepper

  • Diced vegetables (like bell peppers, spinach, or onions)
  • Cooked sausage (without pork)
  • Fresh herbs

Instructions
 

Preparation

  • Lightly grease silicone egg bite molds with cooking spray or olive oil to prevent sticking.
  • In a bowl, whisk together the eggs, milk, salt, and pepper until fully combined.
  • Stir in your choice of shredded cheese, vegetables, or cooked sausage to the egg mixture.
  • Carefully pour the egg mixture into each compartment of the mold, filling them about 3/4 full.

Cooking

  • Add 1 cup of water to the Instant Pot and place the mold on the trivet inside.
  • Close the lid and seal the vent. Set the Instant Pot to cook on high pressure for 8 minutes.
  • Once done, let it naturally release for 10 minutes before opening.

Serving

  • Carefully remove the egg bites from the molds and let them cool slightly before serving. Enjoy warm or store for later!

Notes

Feel free to experiment with fillings! Try using spinach for a pop of color and nutrients, or add in some cheese for a delightful gooey surprise. If you prefer denser egg bites, extend the cooking time slightly, but avoid overdoing it to prevent rubbery texture. Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the microwave for 30-60 seconds.
