Ingredients
  

For the Marinade

  • ½ cup soy sauce Use low-sodium if preferred.
  • cup brown sugar Packed for best results.
  • ¼ cup ketchup
  • 2 tablespoons apple cider vinegar Can substitute with rice vinegar.
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon minced garlic
  • 1 teaspoon sesame oil
  • 1 pinch freshly ground black pepper

For the Chicken

  • 4 pieces boneless, skinless chicken thighs Thighs are recommended for juiciness.
  • Green onions For garnish.

Instructions
 

Preparation

  • In a mixing bowl, whisk together soy sauce, brown sugar, ketchup, apple cider vinegar, ginger, garlic, sesame oil, and black pepper until the sugar is dissolved.
  • Place the chicken thighs in a zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes, or longer for more flavor.

Grilling

  • Preheat your grill to a medium-high heat for about 10-15 minutes.
  • Remove the chicken from the marinade, allowing any excess to drip off. Place the chicken on the hot grill. Grill each side for about 5-7 minutes, flipping halfway through until the chicken is cooked to an internal temperature of 165˚F.

Serving

  • Remove the chicken from the grill, let it rest for a few minutes, then slice and serve it garnished with sliced green onions.

Notes

For deeper flavor, marinate for up to 8 hours. Keep an eye on the grill flames to prevent burning due to the sugar in the marinade. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
