Ingredients
  

For the chicken and sauce

  • 1 lb Boneless, skinless chicken breasts
  • 1/4 cup Honey
  • 2 tablespoons Hot sauce Adjust to taste
  • 1 teaspoon Garlic powder
  • 1 tablespoon Soy sauce
  • 2 cups Rice, uncooked

For garnishing

  • Vegetables (shredded carrots, bell peppers, corn, or your favorites) Choose according to preference
  • Green onions For garnish
  • Sesame seeds Optional, for garnish

Cooking the rice

  • Start by cooking the rice according to package instructions, which takes about 15-20 minutes.

Preparing the chicken

  • While the rice is cooking, cut the chicken breasts into bite-sized pieces.
  • In a medium bowl, combine honey, hot sauce, garlic powder, and soy sauce and whisk until smooth.
  • In a large skillet, heat a tablespoon of oil over medium-high heat, add the chicken pieces, and cook for about 5-7 minutes or until golden brown and cooked through.
  • Pour the sauce over the cooked chicken and continue cooking for an additional 2-3 minutes until well coated and the sauce thickens.

Assembling the bowls

  • In serving bowls, layer the cooked rice, then top with the spicy honey chicken.
  • Add your favorite vegetables, and sprinkle with green onions and sesame seeds if desired.

Notes

For ingredient substitutions, maple syrup can be used in place of honey. To save time, marinate the chicken ahead of time. Avoid overcrowding the skillet while cooking the chicken for proper sear and caramelization. Leftovers can be refrigerated for up to 3 days or frozen for up to a month.
