Honey Mustard Potatoes are a simple yet flavorful side dish that combines the sweetness of honey with the tangy zest of mustard.   • 1 ½ pounds baby potatoes halved
  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 1 ½ tablespoons honey
  • 2 cloves garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional garnish: chopped parsley or thyme

Instructions
 

  • Preheat the Oven
  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with non-stick spray.
  • Prepare the Potatoes
  • Wash and halve the potatoes. Place them in a large mixing bowl.
  • Make the Honey Mustard Glaze
  • In a small bowl, whisk together the olive oil, Dijon mustard, honey, minced garlic, salt, and pepper.
  • Coat the Potatoes
  • Pour the honey mustard glaze over the potatoes. Toss until the potatoes are evenly coated.
  • Arrange and Roast
  • Spread the potatoes out in a single layer on the prepared baking sheet. Ensure they are not crowded for even roasting.
  • Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the potatoes are golden brown and tender.
  • Serve
  • Remove from the oven and transfer to a serving dish. Garnish with chopped parsley or thyme if desired. Serve hot.
