  • 4 pieces boneless, skinless chicken breasts
  • 1/2 cup honey
  • 1/4 cup Dijon mustard
  • 1 cup shredded cheese (cheddar or mozzarella)

Preparation

  • Preheat your oven to 375°F (190°C).
  • Take the boneless, skinless chicken breasts and gently pound them to an even thickness, about 1-inch thick.
  • Sprinkle salt and pepper on both sides of the chicken breasts.
  • In a bowl, whisk together the honey and Dijon mustard until well combined.
  • Heat a drizzle of olive oil in a large oven-safe skillet over medium heat. Once hot, place the chicken breasts in the skillet and cook for about 3-4 minutes on each side, until they are golden brown.

Cooking

  • Pour the honey mustard mixture over the browned chicken in the skillet, ensuring each piece is well coated.
  • Sprinkle the shredded cheese generously over the sauce-coated chicken.
  • Transfer the skillet to the preheated oven and bake for 20 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is bubbly and golden.
  • Remove from the oven and let it sit for a few minutes before serving.

Notes

Leftovers can be refrigerated for up to 3 to 4 days. If you want to keep it longer, you can freeze the chicken before baking for up to 3 months.
