Preparation

  • Preheat your oven to 400°F (200°C).
  • If using regular-sized carrots, peel and cut them into sticks about 2-3 inches long; if using baby carrots, leave them whole or cut them in half.
  • In a small saucepan, melt the butter over low heat. Once melted, add the honey and minced garlic. Stir for about 1-2 minutes.

Cooking

  • Place the carrots on a baking sheet lined with parchment paper. Pour the honey garlic butter mixture over the carrots and toss until evenly coated. Season with salt and pepper.
  • Spread the carrots out in a single layer on the baking sheet. Roast in the preheated oven for about 20-25 minutes, until they are tender and starting to caramelize.
  • Remove carrots from the oven and sprinkle with fresh parsley if desired. Serve warm.

Notes

Don’t overcrowd the pan to ensure proper roasting. Experiment with glazes like lemon juice or chili flakes for added flavor. Store leftovers in an airtight container in the refrigerator for 3-4 days.
