Ingredients

Main Ingredients

  • 1 lb beef sausage
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

Preparation

  • Start by slicing the bell pepper, zucchini, and red onion. Mince the garlic cloves and set everything aside.

Cooking

  • In a large pan, heat a tablespoon of olive oil over medium heat. Once the oil is hot, add the beef sausage. Cook for about 5-7 minutes, turning occasionally, until nicely browned.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Toss the sliced bell pepper, zucchini, and red onion into the pan. Season with salt and pepper. Sauté these for about 5-10 minutes until they become slightly tender.
  • Drizzle the honey over the sausage and veggie mix. Stir everything well and allow it to cook for an additional 2-3 minutes, letting the honey caramelize and coat the ingredients beautifully.
  • Remove from heat and serve hot, perhaps over a bed of rice or alongside a simple green salad for a satisfying meal.

Notes

For substitutions, consider using chicken sausage or turkey sausage, and feel free to mix in other veggies like broccoli or carrots. Don't overcook the veggies; they should be tender but still crunchy. Avoid adding honey too early to prevent bitterness. Store leftovers in an airtight container for up to 3 days or freeze for a month. Reheat on low or in the microwave.
