  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey (or maple syrup for a vegan option)
  • 2 tablespoons olive oil

Preparation

  • Preheat your oven to 400°F (200°C).
  • Remove any damaged outer leaves of the cabbage. Slice the cabbage into 1-inch thick steaks while keeping the core intact.
  • In a small bowl, whisk together balsamic vinegar, honey, olive oil, salt, and pepper until well combined.

Cooking

  • Place the cabbage steaks on a lined baking sheet in a single layer. Brush each side with the honey-balsamic mixture.
  • Roast in the preheated oven for 20-25 minutes, flipping halfway through, until tender and golden brown.

Serving

  • Remove from oven and serve warm, garnished with any optional toppings.

Notes

Drizzle leftover glaze on the cabbage post-roasting for extra flavor. Store leftovers in an airtight container for up to 3 days or freeze individually for up to 3 months.
