  • 2 cups grated zucchini, squeezed out excess moisture
  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs room temperature
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg

Brown Sugar Icing Ingredients

  • 0.5 cup butter melted
  • 1 cup brown sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • 1.5 cups powdered sugar

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  • Grate the zucchini and place it in a clean kitchen towel to squeeze out excess moisture.
  • In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.

Mixing

  • In another mixing bowl, combine granulated sugar, brown sugar, and vegetable oil. Beat until smooth and creamy.
  • Incorporate the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in the grated zucchini.

Baking

  • Pour the batter into the prepared baking pan and spread evenly. Bake for 30-35 minutes or until a toothpick inserted in the middle comes out clean.
  • Allow the cake to cool in the pan for about 15 minutes before transferring to a wire rack to cool completely.

Making the Icing

  • In a saucepan, melt butter over low heat. Stir in brown sugar and let it come to a gentle boil for 2 minutes.
  • Remove from heat and whisk in milk and vanilla extract, then add powdered sugar until smooth.

Frosting

  • Once the cake has cooled, drizzle the brown sugar icing over the top before slicing and serving.

Notes

For a lighter version, consider using unsweetened applesauce for some of the oil. Squeeze the zucchini well to avoid a soggy cake. Consider adding chopped walnuts or pecans for added flavor.
