  • 1 cup plain Greek yogurt (preferably full fat for creaminess)
  • 1 medium cucumber (peeled and grated, ensure to drain excess moisture)
  • 2 cloves garlic (minced, adjust to taste)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh dill (or mint, if preferred)

Preparation

  • Start by peeling the cucumber, and then grate it using a box grater. Ensure you squeeze out any excess water with a clean kitchen towel or paper towel.
  • In a medium-sized mixing bowl, combine the drained cucumber and Greek yogurt. Stir until they are well mixed.
  • Next, add in the minced garlic, fresh lemon juice, and olive oil.
  • Sprinkle in some salt and pepper according to your taste preferences. Give it a good stir.
  • Cover the bowl and let it chill in the refrigerator for at least 30 minutes before serving.

Notes

Store in an airtight container in the refrigerator for up to 4-5 days. Avoid freezing tzatziki as the texture may change upon thawing. If it thickens in the fridge, add a splash of olive oil or water to restore consistency.
