Preparation

  • In a large pot, heat olive oil over medium heat. Add diced onions and sauté until translucent, about 3-5 minutes.
  • Stir in minced garlic and cook for an additional minute until fragrant.
  • Add carrots, celery, zucchini, and bell pepper to the pot. Cook for 5-7 minutes, allowing the vegetables to soften.
  • Stir in the can of diced tomatoes along with their juices, and pour in the vegetable broth. Add Italian seasoning, salt, and pepper. Bring to a gentle boil.
  • Reduce heat and let the soup simmer for 15-20 minutes to meld the flavors beautifully.
  • Turn off heat and stir in the heavy cream for a rich texture. Adjust seasoning if needed.
  • Ladle the soup into bowls and garnish with fresh basil leaves before serving.

Notes

Feel free to swap out vegetables or add leafy greens. For a creamier texture, blend a portion of the soup.
