Ingredients
  

Main Ingredients

  • 2 cups granulated sugar
  • 1 cup water Used for both syrup and cornstarch mixture
  • 1 cup cornstarch
  • 1/2 cup powdered sugar For dusting
  • 1/2 teaspoon citric acid
  • 1 tablespoon rosewater or lemon extract Or your choice of flavor
  • 1/2 cup chopped nuts Optional, can use pistachios or walnuts
  • Food coloring Optional, for a fun touch

Preparation

  • Grease an 8-inch square baking pan with a little oil or butter.
  • In a medium saucepan, combine the granulated sugar, water, and citric acid. Heat over medium-high heat until the sugar dissolves and boil for about 10 minutes until it reaches a soft ball stage (240°F / 115°C).
  • In another saucepan, combine cornstarch with 1 cup of water, stirring well. Heat over medium heat, stirring until thickened, about 5-7 minutes.
  • Gradually pour the hot sugar syrup into the cornstarch mixture, stirring continuously until incorporated. Add your selected flavoring and food coloring if using.
  • Cook the mixture over low heat for another 30-40 minutes until it thickens and pulls away from the sides of the pan.
  • If using nuts, fold them into the mixture.
  • Pour the mixture into the prepared pan and smooth the surface. Let it cool for 4-6 hours or until set.
  • Dust a cutting board with powdered sugar, turn out the Turkish Delight and cut into cubes. Dust each piece with more powdered sugar.

Notes

Homemade Turkish Delight is best stored in an airtight container at room temperature away from sunlight for 1-2 weeks. For longer storage, individual pieces can be frozen for up to 3 months.
