  • 2-3 tablespoons maple syrup or honey Adjust according to taste.

  • 1-2 tablespoons olive oil or coconut oil For creaminess; can vary oils for different flavors.

Preparation

  • If using raw pistachios, roast them in a preheated oven at 350°F (175°C) for about 10 minutes until lightly golden. Allow them to cool.

Blending

  • Add the pistachios to a food processor and blend for about 2-3 minutes until they start to form a creamy paste. You may need to scrape down the sides to ensure even blending.

Adding Sweeteners

  • Incorporate 2-3 tablespoons of maple syrup or honey to the pistachio paste along with the vanilla extract. Continue blending until the mixture becomes smooth and creamy.

Adjusting Texture

  • If the spread is too thick, gradually add 1-2 tablespoons of olive or coconut oil while blending until it reaches your desired consistency.

Final Touches

  • Taste the spread and add a pinch of salt if desired. Blend once more for a few seconds to combine all ingredients thoroughly.

Storage

  • Spoon the sweet pistachio spread into a clean jar and store it in the refrigerator. It should stay fresh for up to two weeks!

Notes

For the best flavor, use fresh, unsalted pistachios. Personalize the sweetness by adjusting the amount of sweeteners used. You can store it in small portions in the freezer for up to three months.
