Ingredients
  

For the Peanut Brittle

  • 1 cup sugar
  • 1/2 cup corn syrup
  • 1/4 cup water
  • 1 cup roasted peanuts (unsalted)
  • 1 tablespoon unsalted butter
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • a pinch salt (optional) Adds extra flavor

Instructions
 

Preparation

  • Line a baking sheet with parchment paper or lightly grease it.

Cook the Sugar Mixture

  • In a medium saucepan, combine the sugar, corn syrup, and water. Cook over medium heat, stirring constantly until dissolved.

Bring to a Boil

  • Stop stirring and allow the mixture to come to a boil, cooking until it reaches 300°F (hard crack stage) using a candy thermometer if available.

Add the Peanuts and Butter

  • Immediately stir in the peanuts and butter, cooking for an additional 2-3 minutes until the mixture turns light golden brown.

Incorporate Baking Soda and Vanilla

  • Remove from heat and quickly stir in the baking soda and vanilla extract. Be cautious as the mixture will bubble.

Pour and Spread

  • Pour the mixture onto the prepared baking sheet and spread into an even layer with a spatula.

Cool and Break Apart

  • Allow the candy to cool completely at room temperature. Once cool, break it into pieces.

Notes

Store in an airtight container to maintain crunch for 2-3 weeks. If it loses crunch, briefly microwave for about 10 seconds.
