Equipment

  • Mixing bowls (large and medium)
  • Electric mixer
  • Measuring cups and spoons
  • Baking sheets
  • Parchment paper
  • Cooling rack

Ingredients

  • 1 cup unsalted butter softened
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • For the Peanut Butter Filling:
  • 1/2 cup creamy peanut butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons milk

Instructions

  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Make the Cookie Dough:
  • In a large mixing bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  • In a separate medium bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Shape and Bake the Cookies:
  • Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets about 2 inches apart. Flatten each ball slightly with the back of a fork to create a crisscross pattern.
  • Bake for 8-10 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rack to cool completely.
  • Prepare the Filling:
  • In a medium bowl, beat together the creamy peanut butter, powdered sugar, vanilla extract, and milk until smooth and spreadable.
  • Assemble the Cookies:
  • Once the cookies have cooled completely, spread a generous amount of peanut butter filling on the bottom side of one cookie. Top with another cookie to create a sandwich. Repeat with the remaining cookies and filling.
  • Serve:
  • Enjoy your Homemade Nutter Butter Cookies with a cold glass of milk or as a sweet treat anytime!
