Ingredients
  

For the Crust

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar

  • 2 large eggs

  • 1/2 teaspoon baking powder

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine 1 cup flour, 1/4 cup granulated sugar, and melted butter. Stir until cbly.
  • Press this mixture into the bottom of a greased 8x8 inch baking dish.
  • Bake for 15 minutes or until lightly golden.

Filling Preparation

  • In a separate bowl, whisk together the eggs, 1 cup sugar, 1/4 cup flour, lemon zest, and lemon juice.
  • Add baking powder and whisk until well combined.

Baking

  • Pour the lemon filling over the pre-baked crust, spreading it evenly.
  • Return to the oven and bake for an additional 20 minutes, or until the filling is set and no longer jiggles.

Cooling and Serving

  • Once baked, allow the lemon bars to cool completely in the pan.
  • Once cooled, sprinkle with powdered sugar and cut into squares.
  • They are best served chilled or at room temperature.

Notes

Use fresh ingredients for the best flavor. Don't skip the cooling time, as it helps the bars set properly. Adjust the sugar level to suit your taste, and feel free to add a hint of vanilla extract for added flavor.
