Cuisine Asian
- 3 cups cooked rice preferably day-old
- 2 tablespoons vegetable oil
- 1 cup chopped mixed vegetables like carrots, peas, and corn
- 2 eggs lightly beaten
- 3 tablespoons soy sauce or to taste
- 1 green onion sliced
- salt and pepper to taste
Prep the Rice: If using leftover rice, break up any clumps with a fork. Day-old rice works best, but if you don't have any, cook your rice and let it cool slightly.
Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
Cook the Vegetables: Add the mixed vegetables to the skillet and stir-fry for about 2-3 minutes until they're tender.
Scramble the Eggs: Push the veggies to one side of the skillet and add the beaten eggs to the other side. Scramble until fully cooked.
Combine Ingredients: Add the rice to the skillet, breaking apart any remaining clumps. Mix everything together until combined.
Season: Pour in the soy sauce, and season with salt and pepper. Stir-fry everything for an additional 3-5 minutes, ensuring each grain of rice is coated with flavor.
Finish with Green Onions: Finally, sprinkle in the fresh green onions and stir to combine. Remove from heat and serve hot!
