Ingredients

  • 3 cups cooked and cooled rice preferably day-old
  • 2 tablespoons vegetable oil
  • 2 eggs lightly beaten
  • 1 cup mixed vegetables peas, carrots, corn
  • 3 green onions sliced
  • 3 tablespoons soy sauce or tamari for a gluten-free version
  • 1 teaspoon sesame oil optional
  • salt and pepper to taste

Instructions

  • Prepare the Rice: Start with cooked and cooled rice. Day-old rice works best since it'll be a bit drier, helping to achieve that wonderful texture.
  • Heat the Wok or Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
  • Scramble the Eggs: Add the beaten eggs and quickly scramble, cooking until fully set. Remove from the pan and set aside.
  • Sauté the Veggies: In the same pan, add your mixed vegetables and sauté for about 2-3 minutes, until they are heated through and tender.
  • Combine Everything: Add the rice to the pan, breaking up any clumps. Stir in the soy sauce, scrambled eggs, green onions, and sesame oil. Toss everything together and cook for an additional 3-5 minutes, allowing the rice to absorb the flavors.
  • Season and Serve: Taste and season with salt and pepper as needed. Serve hot and enjoy the flavor explosion!
