  • 1 cup rolled oats
  • 1/2 cup chopped dried figs
  • 1/2 cup almond milk (or milk of your choice)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon (optional) For added flavor
  • 1/4 cup chopped nuts (optional) For added crunch and protein

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line an 8x8 inch baking dish with parchment paper.
  • In a large bowl, combine rolled oats, salt, and cinnamon (if using). Mix well.
  • Add chopped dried figs, almond milk, honey or maple syrup, and vanilla extract. Mix until well combined.
  • Pour the mixture into the prepared baking dish, spreading it evenly and pressing down firmly.
  • Bake for about 20-25 minutes, or until the edges are golden brown and the center is set.
  • Allow to cool in the dish for 10-15 minutes, then lift out using the parchment paper and slice into bars.
  • Serve warm or at room temperature.

Notes

For substitutions, use chopped dates or raisins if out of figs. Adjust baking time for chewier bars. Store in an airtight container for up to 3 days at room temperature or refrigerate for up to a week. Reheat in the microwave for best flavor.
