Ingredients
  

Egg Base

  • 6 large large eggs
  • ½ cup shredded cheese (cheddar, mozzarella, or your preference) Choose your favorite cheese.
  • ¼ cup diced bell peppers
  • ¼ cup diced onions
  • ¼ cup chopped spinach
  • to taste Salt and pepper To season the egg mixture.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Spray a standard muffin tin with cooking spray or lightly coat it with oil.
  • In a large mixing bowl, crack open the eggs and whisk them together until fully combined. Season with salt and pepper to taste.
  • Stir in the shredded cheese, diced bell peppers, onions, and spinach. Mix thoroughly.
  • Carefully pour the egg mixture into each muffin cup, filling them about ¾ full.

Baking

  • Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the centers are set and slightly golden on top.
  • Remove the muffin tin from the oven, allow the bites to cool for a few minutes, then run a knife around the edges and pop them out.

Serving

  • Serve warm or store for later. These bites can be paired with a simple salad, fresh fruit, or a slice of warm toast.

Notes

For extra flavors, experiment with mix-ins like zucchini, mushrooms, or breakfast sausage. Store in an airtight container for up to 4-5 days in the refrigerator or freeze for longer storage.
